I had wanted to make some oatmeal breakfast bars, but bars they are not… yummy yummmy granola is what I got instead.. maybe better than a bar.
Recipe adapted from stretcher.com
3 1/2 cups toasted old fashioned oats
1/2 cup chopped cashews
1/2 cup pepitas
1/2 cup dried cranberries
1/4 cup dried, cubed papaya
1/4 cup dried blueberries
3/8 cup sweetened, dried coconut
3/8 cup dark brown sugar
1/3 cup melted butter
2 tablespoons grapeseed oil
1/3 cup honey
To toast oats: place oats on baking sheet, bake for 15-20 minutes at 350*. Stir often to toast oats evenly.
Mix oats and next seven ingredients in bowl, add honey into melted butter; stir well to coat oat-nut mixture with honey-butter mixture. Press into baking pan, bake for 15-18 min at 350* then turn oven off and let granola sit in oven as it cools for another 20-30 min. Granola will firm as it cools.
If you wait until it cools completely you can probably get bars out of it, but I didn’t and I’m fine with it … it’s some gooood stuff with milk.
