Where did my time off go?
oh, yeah I spent a lot of time with this guy.
Off Thursday. Off Friday. Off Saturday.
Back to work today for a short 7 hour day. 7 hours at work seemed so short after working 10-14 hours each day last week.
The past week has been full of carbs, carbs and more carbs.
Coconut cake. Coconut Pumpkin bread. Coconut pie. Pumpkin pie. Sweet potatoes. Mashed potatoes. Sweet potato orange cups. Rolls. Bread. Cookies.
And then Today at work the boss said “Do you want pizza?”
Ugh… not really. But Pizza I got, and came home with the leftovers.
I need a salad.
I big bowl of everything green.
Pumpkin Coconut Bread
Adapted from $5 dinners
1 1/2 cups brown sugar
3/4 cup white sugar
1/3 cup grapeseed oil
2 tsp vanilla
3/4 cup applesauce (i used homemade cinnamon applesauce)
1/2 fat free milk
1 can (15oz) pumpkin puree
1 1/2 cups coconut
1 cup AP flour
2 1/2 cups whole wheat flour
2 tsp pumpkin pie spice
1/2 tsp cinnamon
2 tsp baking soda
1/2 cup pepitas
*Pre-heat oven to 350 degrees
*Add first 9 ingredients (sugar through coconut) to a large bowl and mix well.
*Add remaining ingredients and stir until combined
*Scoop into muffin pan, about 3/4 way full
*Bake for 18-20 min, until a knife comes out clean.
